Banana Walnut Bread

You won’t even know that this delicious and healthy banana walnut bread is vegan and gluten free because it tastes so good! It is soft and moist with hints of cinnamon and vanilla and so easy to make.

No egg substitutes are necessary because the mashed banana does the job perfectly.

Ingredients:

2 cups Healtheries Gluten Free Baking Mix

1 tsp cinnamon

1/2 tsp nutmeg

2 level tsp baking powder

1 level tsp baking soda

3 large ripe bananas, mashed

1/2 cup coconut sugar

1/2 cup raw sugar

1/4 cup unsweetened almond milk (or other plant milk)

1/3 cup rice bran oil (or olive oil or coconut oil)

2 tsp vanilla extract

1 c chopped walnuts

Method:

  1. Preheat the oven to 350F or 180C and grease a loaf tin with oil.

  2. In a medium bowl, sift flour, cinnamon, nutmeg, baking powder, and baking soda.

  3. In a separate large bowl, mash the banana. Then add in the coconut sugar and raw sugar, unsweetened almond milk, oil and vanilla extract. Whisk together well.

  4. Fold the dry ingredients into the wet until just combined. Do not overbeat batter.

  5. Fold in the walnuts.

  6. Pour the batter into the loaf tin. Sprinkle some raw sugar and cinnamon over the top.

  7. Place the loaf into the oven and bake for 55 minutes or until a skewer comes out clean and the top of the banana bread golden.

  8. When cooked remove from the oven and allow to cool in the pan for 10 minutes before removing.

  9. Slice and serve warm but also yummy cold the next day.

  10. Store in an airtight container.

Loaf will keep in the freezer for one month. Delicious warmed in the oven before serving.

Walnuts can be substituted for chocolate chips if desired.
